These Funfetti Cookie Sandwiches are incredibly quick to whip up and taste absolutely amazing. With minimal prep and basic ingredients, they deliver a soft, sprinkle-studded cookie and rich, creamy filling for a fun and delicious treat.
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
Roll the cookie dough into 1½-inch balls. Coat each ball in Funfetti sprinkles, then place on the prepared baking sheet. Gently flatten the tops with your fingertips.
Repeat until you have 12 cookies. Bake for 12–14 minutes, or until the edges are lightly browned.
While the cookies bake, combine the cream cheese, powdered sugar, and vanilla extract in a bowl. Use a hand mixer to blend until well combined.
Add the milk and blend again until smooth. If the frosting is still thick, add more milk (one teaspoon at a time) until you reach a spreadable consistency. Transfer the frosting to a piping bag.
Once the cookies are done, let them cool completely on the baking sheet or on a wire rack.
Flip over 6 of the cookies so the bottoms face up. Cut the tip of the piping bag, then pipe a thick swirl of frosting onto each flipped cookie.
Place the remaining cookies on top and press gently so the frosting edges protrude slightly.
Dip the sides of the cookie sandwiches in extra Funfetti sprinkles if desired. Enjoy immediately, or store them in an airtight container in the freezer.
