These Gingerbread Man Oreo Pops are festive, delicious, and perfect for the holidays! With a crunchy Oreo center, creamy candy coating, and adorable gingerbread decorations, they’re a sweet treat everyone will love.
Start by twist apart the regular-sized Oreos. Remove the cream from one half, leaving one cookie plain and the other with filling. Arrange the cookie halves on a silicone mat-lined tray.
Then In a microwave-safe bowl, melt the light brown candy melts according to the package instructions, stirring until smooth and lump-free.
Add a small spoonful of melted candy onto the cream-filled Oreo half and press a popsicle stick into it. Add another spoonful of melted candy on top of the stick, then press the plain Oreo half over it to sandwich the stick inside.
Twist apart the mini Oreos and remove the cream. Dip one edge of each mini Oreo half in melted candy, attaching two halves to the sides for arms and two to the bottom for legs.
Fully dip the assembled Oreo pops into the melted candy coating, making sure they’re fully covered. Gently tap off excess and place each pop back on the tray. Let them set for about 45 minutes.
Decorate the Gingerbread Men
Use red and green icing to add buttons, bow ties, and other holiday details. Outline the edges of the arms, legs, and head with white icing for that classic gingerbread look. Use black icing for eyes and a mouth.
