Ingredients
  

Dough

  • ¾ cup  Lukewarm water
  • ¼ cup  Caster sugar
  • 1 ¾ tsp  Active dry yeast
  • 1 Large egg, room temperature, beaten
  • ½ cup Buttermilk, room temperature
  • 4 Tbsp Melted butter, cooled to room temperature
  • 1 tsp Vanilla extract
  • Pinch of fine salt
  • 3 ¾  cups All-purpose flour, sifted
  • 4 Tbsp Powdered sugar, sifted

Instructions
 

Make the beignet dough

  • Start witpreheat your oven to 200ºF (93ºC).
  • Next, Mix lukewarm water, sugar, and yeast in a stand mixer. Stir gently, rest for 10 mins until foamy.
  • Add egg, buttermilk, melted butter, vanilla, salt. With a dough hook/hands, gradually mix in sifted flour.
  • Knead the dough by hand or in a mixer until it starts to come together. Once it no longer sticks to your hands or mixer and has a smooth appearance, it's kneaded enough. .
  • Transfer to an oiled bowl, cover, and proof in the turned-off oven (door ajar) for 15-20 mins.
  • You can now switch off your oven and place the bowl inside. Leave the door open. Your dough will proof for 15-20 minutes.

Shape the beignets

  • Once your dough has proven, you can remove it from the cooling oven.
  • On a floured surface, roll the dough to 1/4 inch thick, and cut with a 2-inch heart cutter.
  • Place on a tray, and let rise in the cooling oven, door slightly open, for 30 mins. (This step is optional)

Fry Beignets:

  • Heat oil to 360ºF (180ºC).
  • Fry beignets until golden, about 30-60 secs per side. Drain on paper towels and cool slightly.
  • Then, dust each beignet with powdered sugar and serve them warm or cooled.
