Next, Mix lukewarm water, sugar, and yeast in a stand mixer. Stir gently, rest for 10 mins until foamy.
Add egg, buttermilk, melted butter, vanilla, salt. With a dough hook/hands, gradually mix in sifted flour.
Knead the dough by hand or in a mixer until it starts to come together. Once it no longer sticks to your hands or mixer and has a smooth appearance, it's kneaded enough. .
Transfer to an oiled bowl, cover, and proof in the turned-off oven (door ajar) for 15-20 mins.
You can now switch off your oven and place the bowl inside. Leave the door open. Your dough will proof for 15-20 minutes.
Shape the beignets
Once your dough has proven, you can remove it from the cooling oven.
On a floured surface, roll the dough to 1/4 inch thick, and cut with a 2-inch heart cutter.
Place on a tray, and let rise in the cooling oven, door slightly open, for 30 mins. (This step is optional)
Fry Beignets:
Heat oil to 360ºF (180ºC).
Fry beignets until golden, about 30-60 secs per side. Drain on paper towels and cool slightly.
Then, dust each beignet with powdered sugar and serve them warm or cooled.
