For the Mix (Yields ~5 Cups) 4 ½ cups all-purpose flour 3 ½ Tbsp baking powder 3 Tbsp sugar 1 tsp salt For the Pancakes (Makes 8 Pancakes) 1 ⅔ cups pancake mix 1 ¼ cups whole milk 3 Tbsp melted unsalted butter 1 large egg
Prepare the Pancake Mix Combine all ingredients in a large mixing bowl and mix thoroughly.
Transfer to an airtight container and store in a cool, dry place for up to 2 months.
Make the Pancakes Sift 1 ⅔ cups of pancake mix into a bowl.
Add milk, melted butter, and egg, mixing until smooth.
Heat a griddle or skillet over medium heat and lightly butter it.
Pour ⅓ cup batter for each pancake. Cook for about 3 minutes per side, until golden and easy to lift.
