Ingredients
  

For the Mix (Yields ~5 Cups)

  • 4 ½ cups all-purpose flour
  • 3 ½ Tbsp baking powder
  • 3 Tbsp sugar
  • 1 tsp salt

For the Pancakes (Makes 8 Pancakes)

  • 1 ⅔ cups pancake mix
  • 1 ¼ cups whole milk
  • 3 Tbsp melted unsalted butter
  • 1 large egg

Instructions
 

Prepare the Pancake Mix

  • Combine all ingredients in a large mixing bowl and mix thoroughly.
  • Transfer to an airtight container and store in a cool, dry place for up to 2 months.

Make the Pancakes

  • Sift 1 ⅔ cups of pancake mix into a bowl.
  • Add milk, melted butter, and egg, mixing until smooth.
  • Heat a griddle or skillet over medium heat and lightly butter it.
  • Pour ⅓ cup batter for each pancake. Cook for about 3 minutes per side, until golden and easy to lift.
  • Serve warm with butter and syrup, if desired!
