Ingredients
  

  • 2 ¾  cups 2 ¾ cup All-Purpose Flour
  • cup  Granulated Sugar
  • 2 tsp Baking Powder
  • ¼ tsp Baking Soda
  • ½ tsp Kosher Salt
  • ¼ tsp Ground Nutmeg (optional)
  • ¼ tsp Ground Cinnamon
  • 1 cup Buttermilk 
  • 1 Egg (beaten)
  • 1 tsp  Vanilla Extract
  • Vegetable Oil, for frying
  • Powdered Sugar

Instructions
 

  • Heat oil in a large pot or Dutch oven to 325˚F (measure with a deep-fry thermometer).
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, nutmeg, and cinnamon. In another bowl, mix buttermilk, egg, and vanilla.
  • Gradually add the wet ingredients to the dry, mixing until smooth.
  • On a floured surface, knead the dough for 30 seconds until elastic. Roll out to ½ inch thick and cut into 12-15 rectangles.
  • Fry the beignets in batches for about 3 minutes per side until golden brown. Drain on paper towels.
  • Serve warm, topped with powdered sugar if desired.
