2 large cucumbers (about 1.65 lbs) 1 whole pineapple (about 1.75 lbs) ½ lemon
Wash the cucumbers and cut them into chunks. Peel and cube the pineapple, removing the core if desired. Squeeze the lemon juice.
Add the cucumber, pineapple, and lemon juice to a blender. Blend until completely smooth.
Strain through a fine mesh sieve, leaving some pulp if you prefer a thicker texture.
Pour over ice and garnish with cucumber slices, a lemon wedge, or pineapple. Serve immediately and enjoy.
