Ingredients
  

  • 2 large cucumbers (about 1.65 lbs)
  • 1 whole pineapple (about 1.75 lbs)
  • ½ lemon

Instructions
 

  • Wash the cucumbers and cut them into chunks. Peel and cube the pineapple, removing the core if desired. Squeeze the lemon juice.
  • Add the cucumber, pineapple, and lemon juice to a blender. Blend until completely smooth.
  • Strain through a fine mesh sieve, leaving some pulp if you prefer a thicker texture.
  • Pour over ice and garnish with cucumber slices, a lemon wedge, or pineapple. Serve immediately and enjoy.
