Peel the mandarins and remove any seeds. Add them to a blender and blend until completely smooth. Add sweetener (if needed.)
Pour the coconut milk and blend again until it is smooth and well combined. The coconut milk will add richness and balance out the acidity.
For an ultra-silky texture, strain the mixture through a fine mesh sieve into a bowl. This ensures your popsicles have a luxurious, smooth mouthfeel.
