Ingredients

  • 10 fresh Mandarins
  • 13.5 oz coconut milk
  • 10 oz champagne

Optional:

  • sweetener (honey, maple syrup, or simple syrup)
  • shredded coconut

Instructions

  • Peel the mandarins and remove any seeds. Add them to a blender and blend until completely smooth. Add sweetener (if needed.)
  • Pour the coconut milk and blend again until it is smooth and well combined. The coconut milk will add richness and balance out the acidity.
  • For an ultra-silky texture, strain the mixture through a fine mesh sieve into a bowl. This ensures your popsicles have a luxurious, smooth mouthfeel.
  • Now comes the fun part! Slowly stir in the champagne, making sure to mix in gently to retain some of the bubbles.
  • Carefully pour the mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks into each mold.
  • Place the molds in the freezer and let them set for at least 6 hours, or until completely firm.
  • Once frozen, run the molds under warm water for a few seconds to help release the popsicles. For an extra special touch, sprinkle with shredded coconut!
