Celebrate in style with Champagne Mandarin Coconut Popsicles. These creamy, citrusy treats blend fresh mandarins, coconut milk, and a splash of bubbly for a fun and elegant frozen delight, perfect for any festive occasion.

Ingredients You’ll Need
- fresh mandarins: Peeled and blended into a tangy puree.
- coconut milk: For a smooth, creamy texture.
- champagne: Adds a sparkling, bubbly touch.
- Sweetener: Honey, maple syrup, or simple syrupโadjust based on your mandarins’ sweetness.
- Shredded coconut: For an extra tropical garnish.

Tips & Tricks for Perfect Popsicles
- Choose Ripe Mandarins: The sweeter the fruit, the better the flavor! If your mandarins are slightly tart, a little sweetener can help balance them out.
- For an alcohol-free version, swap Champagne for sparkling white grape juice.
- Use High-Quality Coconut Milk: A full-fat coconut milk will give the popsicles a rich and creamy texture.

Storage Tips
These popsicles can be stored in the freezer for up to two weeks. To prevent freezer burn, keep them in an airtight container or wrap each popsicle in parchment paper before placing them in a resealable freezer bag.

Champagne Mandarin Coconut Popsicles
Ingredients
- 10 fresh Mandarins
- 13.5 oz coconut milk
- 10 oz champagne
Optional:
- sweetener (honey, maple syrup, or simple syrup)
- shredded coconut
Instructions
- Peel the mandarins and remove any seeds. Add them to a blender and blend until completely smooth. Add sweetener (if needed.)
- Pour the coconut milk and blend again until it is smooth and well combined. The coconut milk will add richness and balance out the acidity.
- For an ultra-silky texture, strain the mixture through a fine mesh sieve into a bowl. This ensures your popsicles have a luxurious, smooth mouthfeel.
- Now comes the fun part! Slowly stir in the champagne, making sure to mix in gently to retain some of the bubbles.
- Carefully pour the mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks into each mold.
- Place the molds in the freezer and let them set for at least 6 hours, or until completely firm.
- Once frozen, run the molds under warm water for a few seconds to help release the popsicles. For an extra special touch, sprinkle with shredded coconut!
