Preheat your oven to 375°F (190°C) and lightly grease a mini muffin pan with cooking spray.
On a lightly floured surface, roll out the crescent dough and cut it into small, even squares. Gently press each square into the muffin pan, making sure the edges slightly rise up the sides to form a cup shape.
Assemble the Bites
Cut the brie into small bite-sized pieces and place one inside each crescent dough cup.
Spoon about ½ to 1 teaspoon of cranberry sauce over each piece of brie.
Sprinkle chopped pecans on top for a little crunch. For a festive touch, add a small rosemary sprig to each bite.
Bake and Serve
Place the muffin pan in the oven and bake for 12–15 minutes, or until the crescent dough turns a light golden brown and crisps up nicely.
Remove from the oven and let the bites cool slightly before serving.
