Kiwi Chia Seed Pudding is a simple and delicious treat that’s creamy, refreshing, and bursting with fruity flavor. It’s easy to make just blend, stir, chill, and enjoy a perfectly smooth and satisfying pudding that’s perfect for any time of day.
1 ½cup milk (dairy or plant-based, like almond or oat milk, plus ½ cup extra for adjusting consistency)
¼cup chia seeds
For Decoration:
kiwi, thinly sliced
A few apple slices (optional, for added texture and crunch)
Instructions
First, peel all the kiwis. Set aside ½ kiwi for decoration and another ½ kiwi to add inside the chia seed pudding later. Add the remaining 2 whole kiwis to a blender along with the maple syrup and 1 cup of milk. Blend until the mixture is smooth and creamy.
Next, pour the blended mixture into a bowl or jar. Stir in the chia seeds, making sure they are evenly mixed to prevent clumping. Dice the reserved ½ kiwi for the inside and fold it into the mixture to add bursts of fruity texture.
Then, cover the bowl or jar and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and thicken into a pudding-like consistency.
After chilling, check the texture. If the pudding feels too thick, stir in an additional ½ cup of milk to loosen it up and make it creamy and smooth.
Finally, spoon the pudding into two serving glasses or bowls. Decorate with thin slices of the reserved ½ kiwi and apple slices for a fresh, vibrant garnish. Serve and enjoy!
