Crust: 1½ cups all- purpose flour ¼ cup white sugar ½ cup unsalted butter, plus 1 tablespoon for spreading
¼ tsp salt ¼ cup cold water Filling and Topping 15 plums, pitted and quartered ⅓ cup light or dark brown sugar, plus more for sprinkling 1 tsp vanilla extract ¼ Tbsp Cinnamon Powdered sugar for sprinkling
Crust In a bowl, mix the flour, sugar, and butter until the mixture resembles coarse pea-sized crumbs. Alternatively, use a food processor.
Add the cold water and mix until a soft dough forms. Add more water if needed.
Knead the dough until soft and non-sticky. Shape into a ball, wrap with baking paper, and refrigerate for 1 hour.
Arrange the tart: Preheat the oven to 325°F (165°C). Grease a tart pan with butter.
On a parchment paper, roll the dough into a circle about 12 inches in diameter, slightly larger than your tart tin.
Flip the dough onto the tart tin, then press it into the tin. Remove excess dough.
Poke holes into the tart crust using a fork.
Spread the prunes evenly over the crust.
Bake for 35-40 minutes, or until the filling is bubbly and the crust is golden brown.
Allow to cool before serving. Sprinkle with powdered sugar.
