I’ve tried this recipe a thousand times, and it is hands-down still my favorite plum tart to date! This plum tart consists of a beautiful golden brown flaky pie crust filled with a juicy and sticky ripe plum topping.
It’s super easy to make and even easier to serve with a wide variety of accompaniments!

How To Store Leftover Plum Tart
If you are lucky enough to have any leftovers of the plum tart recipe, first leave it to cool at room temperature. Then, wrap it in plastic wrap, adding an extra layer over the plums to keep them moist.

Tips And Tricks For This Plum Tart Recipe
- You do not have to pre-cook the plums in this recipe. Simply tossing together the fruit, sugar, and flavorings in a small bowl and leaving them to macerate will slightly soften their texture enough before baking. If you pre-cook the fruit, they will be too soggy for anybody’s liking.
- Leave the tart to cool completely before adding the powdered sugar dusting or any garnishes or accompaniments. You can still serve warm if you prefer that.
- Prebake the crust for 10 minutes if you prefer it super crispy. This extra step adds a delightful crunch that enhances the overall texture of the tart.
French Plum Tart
Ingredients
Crust:
- 1ยฝ cups all- purpose flour
- ยผ cup white sugar
- ยฝ cup unsalted butter, plus 1 tablespoon for spreading
- ยผ tsp salt
- ยผ cup cold water
Filling and Topping
- 15 plums, pitted and quartered
- โ cup light or dark brown sugar, plus more for sprinkling
- 1 tsp vanilla extract
- ยผ Tbsp Cinnamon
- Powdered sugar for sprinkling
Instructions
Crust
- In a bowl, mix the flour, sugar, and butter until the mixture resembles coarse pea-sized crumbs. Alternatively, use a food processor.
- Add the cold water and mix until a soft dough forms. Add more water if needed.
- Knead the dough until soft and non-sticky. Shape into a ball, wrap with baking paper, and refrigerate for 1 hour.
Filling and Topping:
- In a medium bowl, combine the cinnamon, brown sugar, and plums. Stir well and set aside.
Arrange the tart:
- Preheat the oven to 325ยฐF (165ยฐC). Grease a tart pan with butter.
- On a parchment paper, roll the dough into a circle about 12 inches in diameter, slightly larger than your tart tin.
- Flip the dough onto the tart tin, then press it into the tin. Remove excess dough.
- Poke holes into the tart crust using a fork.
- Spread the prunes evenly over the crust.
- Bake for 35-40 minutes, or until the filling is bubbly and the crust is golden brown.
- Allow to cool before serving. Sprinkle with powdered sugar.
