Ingredients
  

Dry Ingredients:

  • 2 cups all-purpose flour
  • ½ tbsp baking powder
  • ½ cup brown sugar
  • ½ tsp cinnamon & ½ tsp nutmeg

Wet Ingredients:

  • ½ cup pumpkin puree
  • cups oat milk
  • 2 eggs
  • 1 Tbsp olive oil
  • 1 stick melted butter

Instructions
 

  • In a medium bowl, whisk together the flour, baking powder, brown sugar, cinnamon, and nutmeg.
  • In another bowl, whisk the eggs, oat milk, olive oil, and pumpkin puree. Beat with an electric mixer for about 1 minute, then slowly add the melted butter.
  • Gradually mix the dry ingredients into the wet mixture. Avoid over-mixingslightly lumpy batter is fine.
  • Preheat the waffle maker and lightly brush with olive oil to prevent sticking.
  • Pour about ½ cup of batter into the waffle maker and cook for 5-6 minutes, or until crispy and golden.
  • Serve hot with your favorite toppings like maple syrup, whipped cream, or fresh fruit.
