Ingredients

Wet Ingredients:

  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 1 cup butter, softened
  • 2 eggs
  • 1 tsp vanilla extract

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ tsp baking powder
  • 2 cups old-fashioned oats
  • 2 cups crisp rice cereal (like Rice Krispies)
  • 2 cups chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper or silicone liners for easy cleanup.
  • In a large bowl, cream together the granulated sugar, brown sugar, and softened butter until the mixture is light and fluffy—this should take about 2-3 minutes.
  • Beat in the eggs, one at a time, followed by the vanilla extract. Mix until smooth.
  • In a separate bowl, whisk together the flour, baking soda, salt, and baking powder. Gradually add this mixture to the wet ingredients and mix until just combined.
  • Gently fold in the old-fashioned oats, crisp rice cereal, and chocolate chips. The dough will be thick and full of delicious mix-ins!
  • Drop tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake the cookies for 10-12 minutes, until the edges are lightly golden but the centers are still soft. The cookies will continue to firm up as they cool, so don’t overbake them.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy warm or store for later!
