Ingredients
  

Wet Ingredients:

  • 2 Eggs
  • ¾ cup Sugar
  • ¼ cup Vegetable Oil
  • cups Orange juice, divided (3/4 cup for the cake, the rest for drizzling and glaze)
  • 1 tsp Vanilla extract

Dry Ingredients:

  • 1 ½ cups All-purpose Flour
  • cup Yellow Cornmeal
  • 1 tsp Baking Powder

Optional Decoration:

  • ¼ cup Powdered Sugar (for the glaze)
  • Fresh orange zest (for garnish)

Instructions
 

  • Preheat the oven to 340°F (170°C). Grease a bundt pan with butter or cooking spray and set aside.
  • In a large bowl, whisk the eggs and sugar until light and fluffy. Add the oil, ¾ cup of orange juice, and vanilla extract, and whisk until smooth.
  • Sift in the flour, cornmeal, baking powder, and a pinch of salt. Stir until combined. Add the orange zest and mix.
  • Pour the batter into the prepared bundt pan. Bake for 30-40 minutes or until a toothpick comes out clean.
  • Let the cake cool for 10 minutes. Poke holes in the top with a toothpick and drizzle 3-5 tablespoons of orange juice over the cake. Let it soak.

Make the Glaze

  • Mix powdered sugar with the remaining orange juice (3 tbsp) until smooth.
  • Drizzle the glaze over the cooled cake, garnish with extra orange zest if desired, and serve.
