Wet Ingredients: 2 Eggs ¾ cup Sugar ¼ cup Vegetable Oil 1¼ cups Orange juice, divided (3/4 cup for the cake, the rest for drizzling and glaze) 1 tsp Vanilla extract Dry Ingredients: 1 ½ cups All-purpose Flour ⅓ cup Yellow Cornmeal 1 tsp Baking Powder Optional Decoration: ¼ cup Powdered Sugar (for the glaze) Fresh orange zest (for garnish)
Preheat the oven to 340°F (170°C). Grease a bundt pan with butter or cooking spray and set aside.
In a large bowl, whisk the eggs and sugar until light and fluffy. Add the oil, ¾ cup of orange juice, and vanilla extract, and whisk until smooth.
Sift in the flour, cornmeal, baking powder, and a pinch of salt. Stir until combined. Add the orange zest and mix.
Pour the batter into the prepared bundt pan. Bake for 30-40 minutes or until a toothpick comes out clean.
Let the cake cool for 10 minutes. Poke holes in the top with a toothpick and drizzle 3-5 tablespoons of orange juice over the cake. Let it soak.
Make the Glaze Mix powdered sugar with the remaining orange juice (3 tbsp) until smooth.
Drizzle the glaze over the cooled cake, garnish with extra orange zest if desired, and serve.
