Why You Will Love This Recipe
These rolls are soft, pillowy, and swirled with the delicate sweetness of maraschino cherries, topped with a bold layer of creamy icing just like the kind of treat you’d imagine feasting on after a day of adventures in the Scottish Highlands.
Ingredients you will need
- Dough: Includes flour for the base, dry yeast for rising, sugar for sweetness and glaze, salt for flavor and yeast activation, butter for texture and flavor, milk for moisture and flavor, and egg for binding and color.
- Icing: Powdered sugar adds sweetness and creates a glaze, milk provides creaminess for blending, and vanilla extract imparts a delightful flavor, enhancing the overall taste of the rolls.
Storage Advice
If you’re lucky enough to have leftovers, these rolls store wonderfully! Store them in an airtight container at room temperature, and they’ll stay fresh for up to two days. To keep them soft for longer, you can store them in the fridge for up to 5 days. Just warm them in the microwave for about 15–20 seconds before enjoying.
For longer storage, you can freeze the baked and iced rolls. Once they are completely cooled, wrap them individually in plastic wrap and store in a freezer bag for up to 3 months. Thaw overnight in the fridge and warm them up before serving.
Tips & Tricks
- Perfect Yeast Activation: Make sure your milk is warm but not hot. If it’s too hot, it can kill the yeast, and if it’s too cold, the yeast won’t activate properly. Aim for around 100°F (37°C), which should feel like warm bath water.
- Neat Slicing: Use unflavored dental floss to slice your rolls cleanly without squishing them. Just slide the floss under the roll log, cross it over the top, and pull to cut.
- Make Ahead: If you want to prep these ahead of time, you can make the dough the night before and let it rise in the fridge overnight. In the morning, roll, shape, and bake!
Delicious Brave Iced Rolls
Ingredients
- 1 cup Warm milk
- 1 Tbsp Dry yeast
- 4 Tbsp White granulated sugar
- ¼ tsp Salt
- ¼ cup Butter softened
- 1 Egg
- 1 tsp Vanilla Extract (Optional)
- 3¼ cups Bread flour
- 12 Maraschino cherries
ICING
- 3 cups Powdered sugar
- ¼ cup Milk
- ¼ cup Corn syrup
- ½ tsp Lemon juice
Instructions
Prepare the Dough:
- Place the warm milk (about 100°F) and the dry yeast into the bowl of a stand mixer. Whisk gently and let it sit for around 5 minutes until it becomes frothy.
- Add the sugar, salt, softened butter, egg, vanilla extract (optional), and flour into the stand mixer bowl with the yeast mixture. Using the dough hook attachment, blend the ingredients together on medium speed. Let it mix for around 10 minutes, or until the dough comes together and forms a smooth, elastic ball.
- Transfer the dough to a large, greased bowl, cover it with plastic wrap, and let it sit in a warm spot for 1 hour. The dough should rise and puff up, doubling in size.
Shape the Rolls
- After the dough has risen, softly deflate it by pressing down. Transfer it to a lightly floured surface and use a rolling pin to roll it into a large rectangle, approximately 12×15 inches.
- Roll it up snugly, just like a Swiss roll. Then, using a sharp knife or dental floss, cut the rolled dough into 12 equal pieces, slicing carefully to maintain the round shape of each roll.
- Place the rolls on a parchment-lined baking sheet. Cover them gently with plastic wrap and let them rise again for another hour, until they puff up.
Bake the Rolls
- Preheat your oven to 350°F (180°C). Once the rolls have risen, remove the plastic wrap and bake them for 15–20 minutes, or until they’re golden brown.
- Remove the rolls from the oven and allow them to cool down slightly before adding the icing.
Make the Icing:
- While the rolls are baking, prepare the icing by whisking together the powdered sugar, milk, corn syrup, and lemon juice in a medium bowl until smooth.
- Once the rolls have cooled, fill a decorating bag with the icing and generously pipe it onto each roll. Top each roll with a maraschino cherry in the center for a finishing touch.
- Let the icing set slightly, then enjoy your beautifully iced rolls!
