Store-bought pop tarts CANNOT compete with your very own delicious homemade pop tarts! And, while today’s recipe uses a delicious strawberry jam filling, you can substitute it with many different flavors if you’d like.
These pop tarts are uber-crunchy, loaded with juicy flavors, and effortlessly customizable to your liking. And you can make them in advance and freeze them for future use!

How To Make Homemade Strawberry Pop Tarts With A Strawberry Filling
- Preheat your oven to 350ยฐF. Take one sheet of puff pastry and cut it into 6 equal pieces along the existing fold lines. Add a tablespoon of strawberry jam onto the center of each pastry piece. Whisk an egg and brush the edges of each pastry with the egg wash.
- Place another sheet of puff pastry on top of the jam-covered pieces and press the edges together. Cut the top sheet to match the bottom one.
- Transfer the assembled pastries onto the prepared baking sheet and use a fork to seal the edges. Prick the surface of each pastry with a toothpick to allow steam to escape.
- Brush the tops of the pastries with more egg wash and bake in the preheated oven for about 25 minutes or until they turn golden brown.
5. While the pastries bake, prepare the icing by mixing powdered sugar, a pinch of salt, milk, and vanilla extract in a bowl until smooth. Adjust the consistency with more milk if needed.
6. Once the pastries are baked, let them cool for 5 minutes before spreading the icing over the top of each pastry and adding colorful sprinkles.
7. Transfer the pastries to a cooling rack and let the icing set for at least 5 more minutes before serving. Enjoy while still warm!
Can You Make Your Own Pastry Dough?
If you feel up to the challenge of making your own pop tart pie crust, go for it! I prefer using a store-bought pastry to make this a quick and easy recipe.
If you want to try a basic puff pastry dough, you will need some butter, all-purpose flour, granulated sugar, salt, and milk or eggs. You can take a puff pastry recipe from one of my tarts or pies.
Can I Use Any Other Filling Type In This Homemade Strawberry Pop-Tarts Recipe?
That’s maybe one of the things I love most about this delicious recipe. The ingredients and elements are so simple that you can easily substitute the strawberry jam or preserves with an alternative jam.
I personally love blueberry jam, pineapple jam, and even watermelon jam! And, for more texture, you can add some dried fruit to the jam as well.

Can You Bake These Homemade Strawberry Pop Tarts In The Air Fryer?
You definitely can, and I have the best method to do so!
First, you will need to lower the baking temperature to 320F. That’s because an air fryer produces a more intense and direct heat which will affect how your strawberry pop tarts bake.
Secondly, you will need to reduce the baking time to roughly 18-20 minutes. This is only an estimate and every air fryer and store-bought pastry dough will have different baking times. Make sure to check the progress of the homemade pop tarts around the 15-minute mark. The strawberry pop tarts will be golden brown and crisp when they are done baking.
And finally, bake each pop tart on a perforated piece of parchment paper designed for air fryers. Do not bake it directly onto the air fryer basket or the pop tarts will stick.
Tips for Making These Homemade Strawberry Pop Tarts
- You have to leave the pop tarts to cool for 5 minutes before adding the frosting and immediately sprinkle the garnishes. This will help the icing cover the pop-tarts completely before it sets. Once glazed, leave the pop tarts to cool completely at room temp.
- If you don’t want to use egg wash to help get a golden brown color on the pastry, use melted unsalted butter instead.
- If you want to store leftover pop tarts, place them in an airtight container and store them in the fridge for up to three days. Add a sheet of parchment paper between the layers if you are storing them on top of each other.

Avoid reheating homemade strawberry pop tarts in an upright toaster to prevent frosting from melting and causing a mess. Use an oven or toaster oven on a baking sheet for a couple of minutes instead. Optionally, re-glaze with powdered sugar icing.
Can you freeze homemade strawberry pop tarts?
Yes, you can freeze homemade pop tarts with these simple steps: Let them cool on a wire rack, then place them in an airtight container with parchment paper between each. Wrap the container in foil to prevent freezer burn, label, and store in the freezer for up to 6 months!
Can you use a homemade strawberry filling?
It’s possible but you have to ensure that the strawberry preserves or strawberry jam you are making isn’t too watery or runny. If the filling is soggy, the pie crust or pastry dough will become soggy.

Ingredients
Pop Tart Pastry
- 1 package pepperidge farm puff pastry 2 sheets
- ยฝ cup strawberry jam
- 1 egg
Icing
- 2 cups powdered sugar
- 3 tablespoons milk
- 1 teaspoon vanilla extract
- โ teaspoon salt
- colorful sprinkles
Instructions
- Preheat the oven to 350 degrees fahrenheit. Prepare a baking sheet with parchment paper.
- Lay out the first sheet of puff pastry on a clean surface. Cut into 6 even pieces, following the trifold line already existing in the dough.
- Place a hefty tablespoonful of strawberry jam into the center of each cut rectangle. Spread on the dough, leaving about ยฝ inch of space from the edge of each pastry.
- In a small bowl, whisk an egg for the egg wash. Wash the edges of each pastry.
- Place the second sheet of puff pastry dough on top of the jam covered layer and gently press the edges together. Cut the second sheet of puff pastry on top to match the bottom.
- Transfer the danishes onto the prepared baking sheet. Use a fork to seal the edges of the pastries together. Use a toothpick to press holes throughout the pastry.
- Finish the top with more egg wash and bake in the oven for 25 minutes or until lightly browned.
- While the pastry bakes, make the icing.
- In a mixing bowl add the powdered sugar and salt and whisk together.
- Pour in the milk and vanilla, then whisk again until a smooth, slightly thick glaze is formed. If it is a bit too thick add more milk as necessary to get the right consistency.
- When the pastries are out of the oven allow them to cool for 5 minutes.
- Pour and spread the frosting over each pastry just like a strawberry poptart and sprinkle with colorful sprinkles on top.
- Transfer these to a cooling rack and allow the icing to set for at least 5 more minutes before enjoying while still warm!
