Mini pancakes are not only a fun way to change up your morning routine, but they’re also great for sharing, dipping, and snacking!
Tips & Tricks
- Don’t Overmix: Overmixing can make pancakes tough. Keep the batter slightly lumpy for the fluffiest texture.
- Adjust Colors: Feel free to add a few extra drops of food coloring for brighter, more vibrant pancakes.
- Make it extra festive: Use holiday-themed sprinkles or even a drizzle of chocolate or caramel syrup for added flavor and decoration.
- Use Fresh Butter for Cooking: Add a small amount of butter to the skillet for each batch to prevent sticking and add flavor.

Storage Advice
Refrigerator: Store any leftover pancakes in an airtight container in the fridge for up to 3 days. Pop them in the toaster or give them a quick zap in the microwave, and you’ve got a warm, festive breakfast in no time!
Freezer: Layer pancakes with parchment paper between each one and freeze in a freezer-safe bag for up to 1 month.
Variations
- Peppermint Twist: Add a drop of peppermint extract to the batter for a holiday mint flavor that pairs perfectly with whipped cream.
- Gingerbread Spice: Substitute cinnamon with gingerbread spice for a classic holiday flavor.
- Chocolate Chip Pancakes: Sprinkle chocolate chips onto the batter after pouring for a fun and tasty addition.
